Cranberry Bliss Bars: Tart and sweet squares with pecans and cranberries. Perfect for any occasion.

Looking for a quick, show-stopping treat for your holiday table? These Cranberry Bliss Bars combine festive cranberries, buttery oat base and a hint of white chocolate to deliver all the holiday vibe without hours of prep.

  • Ready in under 45 minutes, Makes ~16 bars ideal for sharing or gifting. Easily customizable (swap white chocolate for dark, add nuts or seeds for extra texture)

The Recipe – “Cranberry Bliss Bars” (Adapted to be simple, crowd-pleasing, holiday-ready)

Ingredients (makes ~16 bars)

  • 2 cups all-purpose flour
  • 1 ½ cups old-fashioned oats
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • ¾ cup (1½ sticks) butter, melted
  • ⅔ cup brown sugar, packed
  • 1 tsp vanilla extract
  • 12 oz fresh or frozen cranberries (see note)
  • ¾ cup white chocolate chips (or chopped white chocolate)
  • Optional: ½ cup chopped pistachios or walnuts for extra “glow” texture

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment, leaving overhang for easy removal.
  2. In a mixing bowl, combine flour, oats, salt and baking powder.
  3. In another bowl, whisk melted butter, brown sugar and vanilla until smooth.
  4. Pour butter-sugar mix into dry ingredients and stir until just combined. Press 2/3 of this mixture evenly into prepared pan to form the base.
  5. Sprinkle the cranberries and white chocolate chips (and nuts if using) evenly over the base.
  6. Crumble the remaining oat-flour mixture on top, lightly pressing but leaving some crumbs loose for texture.
  7. Bake for ~30–35 minutes, or until top is golden and cranberries are just bursting.
  8. Let cool completely in the pan on a wire rack (this helps the bars set cleanly). Then use the parchment overhang to lift out and cut into ~16 bars.
  9. Store in an airtight container at room temp up to 3 days, or refrigerate for firmer texture.

Tips:

  • You can use frozen cranberries — don’t thaw, just toss in straight from freezer (they’ll burst nicely).
  • For a lighter/“healthier” spin: substitute half of the white chocolate chips with chopped dark chocolate and replace ¼ cup butter with unsweetened applesauce (will create a softer bar).
  • These bars pair beautifully with a side of Greek-yogurt-vanilla dip for “outer beauty” indulgence or add a sprinkle of chia + flax seeds on top for a subtle protein/seed boost (fits your inner health + fitness angle).
